Elizabeth earned her Doctorate in Clinical Nutrition from University of Western States, MS in Nutrition Education from American University, and bachelor's in Biology from Hendrix College. A seasoned molecular biologist, she spent over two decades in global biotech operations and quality management leadership, supporting a variety of genetic and oncology assays before moving back to her roots in healthcare. Those years fostered a love for travel and learning about the relationships between culture and food. She has a passion for education and served as a course facilitator and adjunct instructor in the MSNE program at American University before coming to UWS. In addition to her work in the MS-CNFM and DCN programs, Elizabeth is a 4th-year naturopathic medical student and runs a private nutrition practice. Her joy comes in seeing clients become empowered to support their health through education and practiced behavior change.
